Margaret River Cabernet Sauvignon

EVOI Margaret River Cabernet Sauvignon is made with small additions of Petit Verdot and Malbec, all sourced from the rocky estate vineyard in Margaret River.
Cabernet Sauvignon is a hallmark Margaret River variety; it prospers in Wilyabrup soils.
The grapes are handpicked and fermented in small parcels with hand plunging. The juice is pressed to French oak barrels and tanks to finish primary and malolactic fermentation.
Maturation is typically 12 months in oak. After bottling, the wine is cellared before release.
Deep inky red, EVOI Margaret River Cabernet Sauvignon is full bodied and velvety with a seamless ripe tannin finish. Cellaring potential is 10 years.
